Tortellini Marinara

Taste Of Home features some outstanding recipes, and they hit a home run with this one! It is yet another recipe that is easy to make, perfect for a working couple!


1 pkg (9 oz) refrigerated cheese tortellini
1 lb ground Italian Sausage *
1 jar (15 oz) refrigerated marinara sauce
1 can (14 1/2 oz) diced Italian tomatoes, undrained
1/2 lb sliced fresh mushrooms
1 cup (4 oz) shredded part-skim mozzarella cheese

1. Cook tortellini according to package directions
2. Meanwhile, in a large skillet, cook sausage over medium heat until no longer pink; drain
3. Stir in marinara sauce, tomatoes and mushrooms
4. Bring to a boil
5. Reduce heat; cover and simmer for 5 minutes or until mushrooms are tender
6. Drain tortellini; stir into skillet
7. Sprinkle with cheese
8. Remove from heat; cover and let stand 5 minutes or until cheese is melted

Yields 6 servings: 425 calories per serving

* Instead of Italian sausage, we use our ground pork, mixed with various spices
